I think you may be getting sick of my similar ingredient dishes but I have only just discover seeds in cooking like this and I really enjoy, not only the flavour, but the texture and crunch they provide as well.
So here is my easy TV Salad:
Cut up your vegetables into chunks
Throw into a roasting dish the sweet potato and carrots.
Sprinkle with salt, pepper and seasoning and a bit of sesame oil
Toss around the pan to coat
Put in the oven at 200 degrees (checking every 15 minutes) and roast.
After 30 minutes add parsnip, coat with seasoning and at this point add more if needed
Then 15 minutes later add the seeds, as many as you like and roast with the vegetables.
Tossing until they are crunchy and the vegetables cook to perfection.
In a salad bowl toss the spinach, red onion, chilli, mushrooms and zucchini.
Once the vegetables are cooked assembly on your plate
Then eat!
PS; once the vegetables have cooled, toss with the spinach salad and have as a cold lunch too x

- Baby Spinach
- Red Onion (thinly sliced)
- Red Chilli (thinly sliced)
- Mushroom (sliced)
- Zucchini (chopped)
