- Red Cabbage, chopped
- Baby Spinach
- Carrot, slivered with a potato peeler
- Snow Peas, chopped
- Mint
- Freshly Cracked Pepper and Salt
- Gherkin, sliced
- Sirena Tuna - Chili and Oil
- Sunflower Seeds
- Pepita Seeds
- Red Onion
- Lentils, Brown
- Olive Oil
Chop up to your preferred size, but I think chunky, the red cabbage, snow peas and mint. Toss in some baby spinach and slivered carrot. Season with cracked pepper and salt.
Slice thinly the gherkin and add to the salad with the large can of tuna.
In a fry pan heat some olive oil, toss the seeds and red onion until crunchy and browned, toss through the lentils until heated and all moisture gone.
Then add salad ingredients to plate and top with the lentil and seed mixture
