- Black Rice - 1 cup cooked in Rice Cooker
- Red Onion, thinly sliced and chopped
- Red Chillies, thinly sliced
- Green Chillies, thinly sliced
- Garlic, chopped
- Salt, freshly ground
- Pepper, freshly ground
- Sesame Oil
- Sirena Chilli Tuna, large can with oil
- Red Cabbage
- Snow Peas
- Mushrooms
- Plus any of your favourite vegetables.
So here goes, and remember I just made this recipe up tonight after a gym workout... so all my friends who are gym people please comment on the goodness or the not so goodness of this dinner of mine.
- While the rice is cooking, prepare the vegetables.
- Jn your wok place the red onion, chilli (as much or as little as you enjoy) both red and green, garlic, salt, pepper and sesame oil and stir fry. Remember all is to your taste, me I like it hot and spicy so have added lots of everything.
- Once softened and cooked, add the whole can of tuna, oil included and toss, stir frying until browning around the edges. This may seem strange to stir fry tuna and I can assure you the first time someone cooked it this way for me I was not very enthusiastic but did really enjoy the meal.
- Add your vegetables and toss, cooking to your liking.
- Then stir in the cooked black rice and serve.
I am taking this for my lunch tomorrow, that's how much I enjoyed it! x
